At the Green Table: Pizza al’Uovo

Pizza with Pancetta, Eggs and Sage


 Pizza al’Uovo, or pizza with eggs, has been a popular dish in Italy for quite some time and you also see it frequently in places like France and Japan.  It is  becoming more common in restaurants in this country, as well.   

However, when I offer it to someone who has never tried it before, the reactions range from skeptical to some that are rather negative. But when they try it, Pizza al’Uovo becomes one of their favorite pizzas.
