Serves 4 to 6

1 English cucumber
1 cup of Greek yogurt*
2 cloves of garlic, minced

1/4 cup of fresh mint, chopped
1/8 cup of fresh dill, chopped
1/4 tsp dried mint
1 tsp white wine vinegar
extra-virgin olive oil
sea salt and freshly ground black pepper

Peel and grate the cucumber.  Wrap in a dish towel and squeeze out the excess liquid. Place the cucumber in a bowl, add the yogurt and garlic.  Mix thoroughly, then add the fresh and dried mint, the fresh dill, and the white wine vinegar.  Mix again, then drizzle in several teaspoons of extra-virgin olive oil, to taste.  Add the salt and pepper to taste, mix, taste, and adjust any ingredients you think necessary.

* If Greek yogurt is not available, drain regular yogurt and place in a cheese cloth lined colander.  Chill in the refrigerator overnight and let it continue to drain. At this point the yogurt should have a texture and density similar to Greek yogurt.
