leaves from 2 sprigs of fresh spearmint plus one sprig for garnish

1 teaspoon, or to taste, unrefined organic sugar, such as organic Turbinado sugar

2 or 3 ounces, to taste, good Cognac such as Remy Martin 1738 Accord Royal Cognac, or your favorite, plus an extra splash of Cognac


In chilled julep cup or cocktail glass stir the sugar and a splash of Cognac. Add the fresh spearmint and gently muddle or crush the mint with a spoon. Fill the julep cup with crushed or cracked ice, pour in the Cognac and stir until the drink is chilled and the julep cup is frosted, about 10 to 15 seconds. Add additional crushed ice, if necessary.  Garnish with the remaining sprig of mint.
