3 or 4 thin julienned slices of peeled fresh ginger about 1 inch long, minced (if you want a stronger ginger flavor add more, to taste)
1 teaspoon, or to taste, unrefined organic sugar, such as organic Turbinado sugar
leaves from 2 sprigs of fresh mint, spearmint if available, plus one sprig for garnish
2 or 3 ounces, to taste, good bourbon such as Maker’s Mark, or your favorite
In a cocktail shaker or glass, add the sugar and fresh minced ginger. Muddle together until the sugar is nearly dissolved. Add the fresh mint, with a splash of bourbon and continue to gently muddle (or crush with a spoon). Strain into a chilled julep cup or cocktail glass. Fill the julep cup with crushed or cracked ice, pour in the bourbon and stir until the drink is chilled and the julep cup is frosted, about 10 to 15 seconds. Add additional crushed ice if necessary. Garnish with the remaining sprig of mint.
